If you are like me, you probably got caught up with the distinction between what the Swedish call a pancake and what American's believe is a pancake. What a pancake is to the Swedes is the same as batter pudding to us. For those interested, however, here is a simple recipe to make some Sweden Oven Baked Pancakes (with bacon berries!!)
Sweden Oven-Baked Bacon Pancakes

Times:
-Prep = 10 mins
-Cook = 25 mins
Servings: 6 - 8

Ingredients:
- 12 - ounce package of thick sliced bacon
- 5 cups of milk
- 3 eggs
- 3 cups of all purpose flour
Prep and cook:
- Spray roasting pan with non-stick spray
- Remove excess fat from bacon, and dice into fine pieces
- Scatter at bottom of pan
- Place pan into oven
- Heat oven to about 425 degrees, or until the bacon will cook to a crisp
- Mix milk and eggs together in a bowl
- Stir in flour in 1/2 cup increments till it becomes a smooth batter
- Once bacon is crisp, pour batter evenly into pan, whisking the bacon at the bottom
- Replace into oven for about 25 to 30 minutes, or until pancake is puffed and golden brown
- Serve as is, with ligonberries like the Swedes, or maple syrup like the Americans
